Recipe: Let’s Make Lentil Bowls!
What You Need:
1 package of Organic baby broccolini
Feta cheese (I much prefer the block rather than the already crumbled kind)
1 package of Ready-to-Eat Lentils
TJs Chili Onion Crisp
Instructions:
Preheat oven to 350 degrees. Leave a baking sheet in the oven to heat up too.
Cut the ends off of the broccolini and rinse with cold water- dry with paper towel (keep the paper towel)- season with olive oil, salt and pepper and toss thoroughly.
Take the baking sheet out of the oven once at temp and add the broccolini to the pan- make sure that it is spaced out evenly on the pan.
Return broccolini to oven for about 10-15 mins (check on it once and turn)- I like my broccolini bright green and still a bit crunchy!
Remove lentils from the plastic pouch and put in a microwave safe bowl- loosen with a fork. Put the damp paper towel from drying the broccolini over the lentils and microwave on high for 3 minutes.
Once the broccolini is done, remove from the oven and roughly chop. Add to the lentils.
Crumble some feta on top.
Add the desired amount of chili crisp and oil for added flavor!
